Breakfast Green Smoothie

Vanochtend was ik een beetje de tijd vergeten dus ik moest super haasten. Aangezien ik sochtends echt niet zonder ontbijt kan functioneren kwam ik met dit ontbijt idee. Ideaal voor als je geen tijd hebt om te ontbijten sochtends. Het vult goed dankzij de havermout, en het is net alsof je een milkshake drinkt! Bovendien zit deze groene smoothie vol met groente en fruit wat een super goed begin is van je dag. Ik heb voor het eerst kaki fruit geprobeerd en ik ben verkocht! Het is een heerlijk zoete vrucht en ook super lekker in smoothies! Dit ontbijt is heerlijk, makkelijk, snel en super gezond! Wat wil je nog meer? (:

Ontbijt Green Smoothie


Ingrediënten 


- 1 banaan
- 1 kaki
- flinke hand spinazie
- 1/4 cup havermout
- 200 ml sojamelk
- scheut water
- klein handje Goji bessen
- tl lucuma poeder 

Methode


Gooi alles in een blender en blend tot een egale massa. Om mee te nemen giet je het in een glazen flesje. (bv. Smoothie flesje AH)

This morging I was a little late so I really had to hurry. Because I have to have breakfast in the morning I thought of this idea to make a to-go breakfast green smoothie. Ideal for people who have no time to have breakfast in the morning. It fills really well because of the oats and it tastes like a milkshake! Besides, it contains both fruits and veggies, which is a great way to start your day. I tried persimmons for the first time and I am sold! It is a lovely sweet fruit and also perfect as an addition to your smoothies! This breakfast is delicious, easy, quick and super healthy. What do you want more? (:

Breakfast Green Smoothie


Ingredients


- 1 banana
- 1 persimmon
- big handful of spinach 
- 1/4 cup oats
- 200 ml soy milk
- splash of water
- little handful of goji berries
- tsp lucuma powder

Method


Throw everything in a blender and blend until a smooth consistency. To make it a to-go breakfast pour the smoothie in a glass bottle or jar.

Italian Quinoa Salad

Vanavond wilde ik weer graag iets met quinoa maken en het liefst in combinatie met een lekkere salade. Na wat denkwerk ben ik maar gewoon aan de slag gegaan en zo kwam ik tot deze heerlijk gezonde quinoa salade geïnspireerd door de Italiaanse keuken. Quinoa is trouwens een echte superfood! Het bevat erg veel proteïne, gezonde vetten, vitaminen en mineralen en is ook gluten vrij. Het is namelijk geen graan maar een zaad. Het is bovendien op talrijke manieren te combineren dus absoluut het uitproberen waard!

Italiaanse Quinoa Salade


Ingrediënten


3 personen

- 150 gr quinoa
- 100 gr gemengde sla
- 2 teentjes knoflook
- 1 rode ui
- 2 el pesto
- 1 avocado
- 9 cherry tomaatjes
- handje zwarte olijven
- 3 tl kappertjes
- 3 zon gedroogde tomaatjes
- 5 plakjes parma ham
- 1 limoen
- 3 el pijnboompitten
- handje basilicum blaadjes
- evt. wat verbrokkelde feta

Methode


Breng de quinoa met 300 ml water al roerend aan de kook en laat het nog 8 minuten doorkoken. Laat de quinoa na 8 minuten afgedekt nog even doorgaren.
- Pureer driekwart van de avocado met een beetje peper en zout.
- Fruit in een pan de knoflook en de ui in een scheutje olijfolie. Voeg de pesto, gedroogde tomaatjes (in reepjes), olijven (in stukjes), kappertjes, gepureerde avocado en sap van een halve limoen toe.
- Bak dit even, met wat peper en zout naar smaak, tot een sausje en doe het vuur uit.
- Bak de parma ham in een droge pan knapperig en snijd het in stukjes en voeg toe aan de saus.
- Doe de sla in een kom, voeg de quinoa gemengd met de saus toe aan de sla.
- Snijd de rest van de avocado in blokjes, de cherry tomaatjes in halfjes en strooi die over de salade.
- Rooster de pijnboompitten in een droge pan en strooi ze er ook overheen samen met de basilicum blaadjes.
- Serveer met wat verbrokkelde geitenkaas feta en besprenkel met wat limoen.

Tonight I really wanted to make something with quinoa and then in combination with a delicious fresh salad. After some brainstorming I just started cooking and this is how this lovely quinoa salad was born inspired by the Italian kitchen. By the way, quinoa is a true superfood and thus really healthy! It contains lots of protein, healthy fats, minerals, vitamins and it is gluten free. Quinoa looks like a grain and is mostly used as one but it is a seed. On top of that, quinoa can be used in numerous ways, so definitely a food to try!

Italian Quinoa Salad


Ingredients


3 persons

- 150 gr quinoa
- 100 gr mixed greens
- 2 cloves of garlic
- 1 red union
- 2 tsp pesto
- 1 avocado
- 9 cherry tomatoes
- handfull of olives
- 3 tsp capers
- 3 sun dried tomatoes
- 5 slices of parma ham
- 1 lime
- 3 tbsp pine nuts
- handfull of fresh basil leaves
- some crumbled goat cheese feta

Method


- Bring the quinoa with 300 ml of water to a boil while stirring and let it cook for 8 minutes. Cover the quinoa and let it stand for a couple minutes.
- Puree 3/4 of the avocado with some pepper and salt.
- Fruit the garlic and onion in some olive oil in a pan. Add pesto, pureed avocado, chopped sun dried tomatoes, chopped olives, capers and juice of half a lime.
- Stir fry the sauce for a little and add some salt and pepper to taste. Bake parma ham in a dry pan until crispy, cut in pieces, and add to the sauce.
- Put the mixed greens to a bowl and add the quinoa mixed with the sauce to this.
- Cut the rest of the avocado and cut the cherry tomatoes in halves and add to the salad.
- Dry roast the pine nuts and sprinkle over the salad.
- Top with the fresh basil leaves.
- Serve with some crumbled goat cheese feta and sprinkle with some lime.

Tropical Mango Oats

A little story:

Once upon a time, there was a girl. She woke up one morning and looked outside her window pane, "the weather is getting so cold and there is rain!" Sadness flew all over her. She needed some warmth and sun to brighten her up and give her some beautiful energy to take on the day. She loved tropical paradises with all her heart and dreamt every night of a place like that. She hoped that a big bowl of deliciousness would bring her a little closer to the place of her dreams and she looked in her pantry for things to find. A mango, some oats and a little coconut was what she could see. "Would this bring me some energy?" However it did not brought her a one way ticket, it did give her a sunshine boost only looking at the breakfast she created. The first bite was like a tropical heaven and it only kept getting better! It is warm and comforting for a cold and rainy day and bright, light and sunny to make that day a lovely day. And when she closed her eyes, it was almost if she was in paradise.

Het leven als een sprookje, dat was mijn gevoel bij dit recept. Nadat ik het op had kwam gelijk dit verhaaltje eruit rollen, een echt inspiratie maaltje dus. Nu het kouder en grauwer wordt buiten heeft iedereen af een toe een flinke dosis licht en leven nodig en dit havermout recept smaakt echt naar een paradijsje. De perfecte combinatie van mango, kokos en een beetje ananas in de vorm van een warm en heerlijk ontbijtje is super voor een koude ochtend. Het barst van de vitamientjes en is ook nog eens gemakkelijk te maken!

Tropische Mango Havermout


Ingrediënten



- 40 gr oats
- 100 ml kokoswater ananas (merk: Healthy People, ook lulu's favoriet haha)
- 100 ml soya melk
- 50 ml gefilterd water
- 1/2 mango in blokjes
- 1 gedroogde vijg
- klein handje goji bessen
- tl kaneel
- gember poeder

Methode


Giet de kokos ananas water, soya melk en water in een pannetje. Verwarm het totdat het kookt, zet dan het vuur lager en gooi de havermout erbij samen met een beetje gember poeder en de kaneel. Blijf roeren tot het een papje is en zet het vuur uit. roer alvast een beetje van de mango erdoor en giet in een kom. Top met de rest van de mango, vijg en goji bessen en geniet van dit tropische ontbijtje!

Life as a fairytale, that was the feeling I got when making this recipe. After I finished it, this little story rolled right out of my head, one inspirational breakfast it was. With the days getting colder and grayer, everyone could use a good dose of light and life and this oatmeal recipe really tastes like a piece of paradise. The perfect combination of mango, coconut and a hint of pineapple in the form of a warm and delicious breakfast is perfect for a cold morning. It bursts of vitamins and it also is really easy to make!


Tropical Mango Oats



Ingredients


- 40 gr oats
- 100 ml coconut water pineapple (brand Healthy People)
- 100 ml soy milk
- 50 ml filtered water
- 1/2 mango in cubes
- 1 dried vig
- small handful of goji berries
- tsp cinnamon
- little ground ginger

Method


Pour the coconut water, soy milk and water in a pan and bring to a boil, turn down the heat and add the oats, cinnamon and ginger. Stir till you desired consistency, turn off the heat and stir in some of the mango. Pour the oatmeal in a bowl and top with the rest of the mango, the dried fig and the goji berries and enjoy this delicious tropical breakfast!

Banana-Apple Green Smoothie

Liefde voor Green Smoothies!! Deze is extra creamy door... avocado, mijn absolute favoriet. Je hebt er maar weinig voor nodig voor een creamy resultaat. Bovendien is avocado super gezond en zit het vol met goede vetten. Alleen maar redenen om deze super lekkere en gezonde Green Smoothie uit te proberen!

Banaan-Appel Green Smoothie


Ingrediënten


- 1 banaan
- 2 cups spinazie
- 1 appel
- 1/4 avocado

Methode


Snij de appel in stukjes met schil en gooi ze met de rest van de ingrediënten in een blender, blend, top met wat goji bessen en chia zaad en smullen maar!

- 1 apple
- 1/4 avocado

Method


Cut the apple in pieces with the skin on and put them with the rest of the ingredients, blend, top with some goji berries and chia seeds and enjoy!
